Fattoush

Today I happened across Pioneer Woman's newest recipe for Stacy's pita chips. I had an almost empty bag in our pantry and some fresh mozzarella I wanted to use before it wasn't so fresh any more and so I put two and two together and adapted her recipe to make due with what I had to create a delish dish of fattoush. (He he he, have to laugh cause I know my pronunciation is wrong and probably sounds a lot different, but Fat-toush, hahaha..yes, I'm juvenile.)



Fabulous Fattoush
(adapated from Pioneer Woman)


Stacy's pita chips (I used the bottom of the large bag you can get at Costco)
6 roma tomatoes, cut in large chunks
1/2 red onion, sliced thin
4 to 5 fresh basil leaves, sliced thinly
1 cucumber, cut in chunks
1 cup diced fresh mozzarella
1/3 cup EVOO
2 TBLS. balsamic vinegar
pepper and kosher salt, to taste


Place pita chips in bowl with tomatoes, onion, basil, cucumber, and fresh mozzarella. Mix EVOO and balsamic vinegar and pour over salad. Sprinkle with salt and pepper to taste. Mix and let sit in fridge covered for at least an hour.

One thing I thought would also be yummy in this, kalamata olives. Didn't have any, but yum.
